It is kind of depressing, and sometimes it makes me not want to perform a given upgrade, but then I realize that actually the number of bad reports is amazingly low.  It is nice to know those troubleshooting sites are out there though.

With OS X Leopard 10.5.2 I’ve had only one Mac freeze (I have three) and only once, so it’s been remarkably dependable. However, I have some applications that go ‘boink’ from time to time. Safari is one. Mail is another. Sometimes iPhoto (12,000 photos and still counting).

I’ve had less trouble with OS X than with applications running on OS X, but I assume that part of the problem of the ‘boinks’ belongs to OS X, too, right?

Yes the OS is responsible more often than you might imagine.  you can actually look in the logs and see what died to cause the “boink” as you put it.  I have had one bad crash with leopard, but it was a M$ update failure that caused it.  It actually allowed me to evaluate time machine.  The verdict is TM is good for file recovery, but not that great for system recovery.  If you need system recovery SuperDuper is the way to go IMHO.  I can certainly get into the gorey details, but suffice it to say that after 3 TM restores I still had to do an archive and install to get my system up and running again…
