Ignoring Safari, Finder, and Mail I have three applications running right now.

Terminal - Probably the most useful Mac application of all. I usually have two or three of these open at any one time.
TextEdit - I do not use this much since I find emacs to be a better editor.
iCal - I would be lost without this.
