Apple has improved OS X’s basic applications step by step over the past few years. Safari is now a fast, stable browser with a good feature set.
Mail has improved to the point where I moved all my mail off Microsoft Entourage and decided to go with Apple’s iSync, iCal, AddressBook.
What else is there? Is it only Entourage and Mail? Is there life after Mail or Microsoft?
Taking a look at the email applications available, it would appear that email beyond Apple and.... (excerpted).

Maybe I’m just not a power user, but I use Mail.app for my mail and have not ever felt the need for anything more powerful. The only reason I use Entourage ‘04 is that my work mail is on Exchange, and I’ve yet to get Mail.app to connect from outside the firewall. If I could get Mail.app to do that, I’d not even have Office installed!

Thunderbird does not integrate with AddressBook.app, unfortunately. Without this, Mail.app still remains the best with proper integration (and it’s free, as you mention many times!).
Once Thunderbird finally implements integration, everything changes.
